SHRIMP-AND- SAUSAGE RED RICE image

Number Of Ingredients 15

8 oz. sausage, Italian or andioulle
1/2 C chopped onion
1/2 C diced red or yellow pepper
1 small jalapeno, seeded and finely chopped (optional)
3 cloves garlic, finely minced
1/2 t. dried thyme
1/4 t. crushed red pepper
1/2 t. kosher salt
freshly ground pepper
1 14 oz. can diced tomatoes, drained and crushed
1 rounded T. tomato paste
2 C chicken broth or water
1 C rice
1 T butter
1 lb peeled and deveined shrimp

Steps:

  • 1. In a dutch oven, brown sausage, drain. Add chopped onion. Cook 5 minutes. 2. Add red pepper, jalepeno, and garlic. Cook 5 minutes. 3. Add thyme, red pepper, salt, pepper, tomatoes and paste. 4. Pour in broth or water and butter; bring to a boil. Add rice and simmer, covered, for 20 minutes. Add shrimp and cook an additional 3-5 minutes. 5. Let stand, covered, for 5 minutes.
