SHRIMP AND ASPARAGUS SALAD image

Number Of Ingredients 8

2 scallions,sliced(white & lt green parts)
1/2 cup vinaigrette
1/2 tsp pepper
3/4 tsp grated lemon peel
8 cups romaine lettuce
1 bunch asparagus
1 lb large cooked shrimp, peeled and deveined
3/4 cup crumbled feta cheese

Steps:

  • Trim and cook asparagus for 5 minutes or until tender. In a small bowl stir together scallions, vinaigrette,pepper,and lemon peel. In a large serving bowl, toss romaine lettuce with asparagus,shrimp and feta cheese. Toss with dressing to taste.
