SHRIMP A LA GREQUE image

Number Of Ingredients 8

2 minced garlic cloves
3 tomatoes 1 1/2 lbs.
4 tbs. olive oil
12 jumbo shrimp, shelled ( 1 lb.)
1/4 cup dry white wine
1/4 lb. crumbled feta
2 tb. minced fresh parsley
1 can tomato sauce

Steps:

  • 1. cook garlic and tomatoes in 3 tb. oil for 15 -20 minutes until sauce is thick. 2. Season sauce with salt and pepper. 3. in another skillet, heat 1 tb. oil and saute shrimp 1 min. 4. add wine, deglaze skillet. 5. add tomato sauce, feta, salt, pepper, simmer 3 min. until shrimp is cooked through. 6. sprinkle with parsley.
