1 teaspoon orange zest
2 tablespoons orange juice
2 tablespoons olive oil
1 tablespoon cider vinegar
1/4 teaspoon sea salt
2 cups coarsely shredded carrots
2 beets, peeled and coarsely shredded
1/2 cup of fresh mint, chopped
2 tablespoons toasted sesame seeds

Steps:

  • In small bowl, whisk together orange zest, orange juice, oil, vinegar and salt.
  • In large bowl, combine carrots, beets and mint. Add dressing and toss to coat. Serve topped with sesame seeds.
