Short Stack Cookies (Pancake Cookies) image

Who wouldn't like pancakes any time? Well, there is a great idea here, cookies that taste like buttery pancakes with maple syrup. We are going to try making these for Memorial Day 2018, and see how they are...came from a book that just happened to have recipes in between the wonderful pages!

Number Of Ingredients 9

1 1/2 cup(s) melted butter
2 cup(s) sugar
1 teaspoon(s) salt (i omit)
2 large eggs, beaten
1/2 cup(s) maple syrup (pure maple syrup for tori)
2 teaspoon(s) baking soda
1 teaspoon(s) vanilla
4 cup(s) flour, packed down
1/2 cup(s) sugar for coating dough balls

Steps:

  • Mix butter and sugar. When cooled to room temp, so it won't scramble the eggs, add eggs. Mix. Add syrup, soda, salt (if using, I never do) and vanilla. Mix. Add flour 1 cup at a time, mix after each addition.
  • Chill dough at least 2 hours, or overnight.
  • Oven to 350 degrees. Line cookie sheets with parchment. Roll dough to walnut sized balls, roll in sugar, put onto cookie sheets and flatten slightly. Bake 10-12 min, until nicely browned. Cool on the cookie sheets 2 min, then remove to wire rack to cool completely (if you leave them longer, they will stick).
