A simple casserole for a busy day. I slice everything in my food processor, that really speeds things up in the prep. Great casserole for a potluck dinner and really inexpensive.

Number Of Ingredients 10

2 onions
2 potatoes
3 carrots
1 lb ground beef
1/2 cup rice (raw)
1 cup celery
1 teaspoon salt (approx.)
1/2 teaspoon pepper (approx.)
10 ounces tomato soup
10 ounces water (1 can of water)

Steps:

  • Layer sliced raw veggies into a roaster or casserole dish.
  • Sprinkle each layer with salt and pepper.
  • Pat beef on top.
  • Sprinkle rice over.
  • Add celery.
  • Mix soup and water.
  • Pour over casserole.
  • Cover with lid or foil.
  • Bake 350 2 hours or until veggies are tender.
