Steps:
- In a food processor puree vinegar, 1/4 cup of the golden raisins, capers and 1 garlic clove until smooth. While the machine is on drizzle olive oil into mixture. Taste and adjust seasoning with salt.
- Shave 1 head cauliflower into 1/4" or less thick slices on a mandolin or by hand. Toss in a large bowl with puree and 1/2 cup of additional golden raisins. Let sit for 2 hours, stirring occasionally.
- When ready to serve toss in 1 small julienned or thinly sliced onion and parley chiffonade. Salt and pepper to taste before serving.
