Shamrock Sandwiches image

I recently had these at a BUNKO event. I think they would be great for any St. Patrick's Day party.

Number Of Ingredients 8

8 oz cream cheese, softened
1/4 c mayonnaise (do not substitute)
2 Tbsp dijon mustard
1 pkg thinly sliced corned beef, chopped
2 Tbsp grated red onion
3/4 tsp dill weed
1/4 tsp salt
1 round loaf thinly sliced seedless rye bread

Steps:

  • 1. In a large bowl, beat the cream cheese, mayonnaise and mustard until smooth. Stir in the corned beef, onion, dill and salt. Using a 2 inch shamrock cookie cutter, cut out two shamrocks from each slice of bread. Spread 1 - 2 tablespoonfuls of the filling on the bottom half of the shamrocks, top with remaining shamrocks. Yields: 16 sandwiches.
