This is a wonderful! Recipe and can be pre-pared the night before. just let it come to room temperature first. Everyone! loves this recipe when I make it and there are never any left overs. I serve this with a Russian Rye bread and a nice salad. I hope you love this recipe as much as my family and friends do when I serve it

Time 2h15m

Number Of Ingredients 10

1 cup uncle ben's rice (not instant)
1 (15 1/2 oz.) can whole kernel corn
salt and pepper
1 (6oz.) 1 can el pato hot sauce mixed with 1/2 cup water
1 medium onion, diced
1 medium red pepper, diced
1 lb. lean ground beef, uncooked
1 (6oz.) can tomato sauce mixed with 1/4 cup water
8 to 10 strips of bacon. diced
1 medium red bell pepper, diced

Steps:

  • 1. In a large casserole dish layer ingredients. Spray with pam first. Start with the rice, corn, salt and pepper.
  • 2. layer tomato sauce mixed with 1/2 cup water, chopped onion, and bell pepper. Layer ground beef over the top, salt and pepper to taste.
  • 3. Add tomato sauce with the 1/4 cup of water mixture. Cover with the uncooked bacon. Cover and bake at 350 for 1 hour. Uncover and continue to bake for 30 minutes until bacon is crisp. Because some ovens varies, check to see if done after baking uncovered. sometimes it doesn't take that long. This goes great with Rye bread. "Bon Appetite"
