SESAME-SHOYU POKE image

Yield 4-6 appetizer servings

Number Of Ingredients 9

•1 pound fresh tuna, diced into 3/4-inch pieces (Dyer recommends sushi-grade ahi or tombo, as albacore can be a bit greasy; see note)
•3 scallions, sliced into 1-inch lengths on a bias cut
•1/4 sweet onion, julienned
•1/2 teaspoon grated fresh ginger
•1/4 teaspoon crushed red pepper flakes
•1/4 cup dark sesame oil
•1/4 cup soy sauce (shoyu)
•1 teaspoon toasted sesame seeds (see note)
•Crackers, taro chips or sliced cucumbers, for serving.

Steps:

  • In a bowl, combine tuna, scallions, onion, ginger, pepper flakes, oil, soy sauce and sesame seeds; lightly stir to combine. Serve immediately or refrigerate for up to a day. Note: Sushi-grade tuna is sold at Anzen, Mio Sushi Fish Market, Uwajimaya and Whole Foods. Note: To toast seeds, heat in a dry skillet over medium heat until they start to brown, stirring occasionally. Be careful not to let them burn.
