Sesame-Date Chicken Cho Cho image

Marinating chicken breast ( or thighs) in this date sesame oil marinade gives a new taste to kabobs or grilled chicken. I love this served with a pretty salad on the side, dressed in a similar date dressing......

10 medium pitted dates
1/4 c sesame oil
1/4 c sweet soy glaze or teriyaki
2 Tbsp soy sauce
1/4 c rice vinegar
2 Tbsp minced garlic
1 Tbsp honey
1 lb boneless skinless chicen breasts, cut into 1" wide strips
2 Tbsp sesame seeds (optional)
SUGGESTED SIDE SALAD
6 c mixed salad lettuces
1/2 c thinly sliced red peppers
1/2 c thinly slced red oions

Steps:

  • 1. Place dates , sesame oil, soy glaze , soy sauce, vinegar, garlic and honey in small food processor and blend thoroughly until smooth. Skewer chicken breast or thigh strips onto 6 soaked wooden or metal skewers . Place the marinade mixture into a 1 gallon sealable plastic bag. Place skewers in bag, seal and massage lighty to distribute marinade. Place in fridge for 20-30 minutes or longer.
  • 2. Preheat grill to Medium-high heat. Remove skewers from marinade. Grill skewers over medium high heat for about 9 minutes, turing three times until done. Sprinkle with sesame seeds if desired.
  • 3. * For a salad to pair with the sesame date cho cho chicken, arrange your choice of lettuce mixture, a few red pepper strips and thinly sliced red onions , and feta cheese next to the skewers on serving plate.
  • 4. For a sesame date vinaigrette for the salad, blend in small processor: 6 pitted Dates 3T sesame oil 1 tsp soy sauce 1/4 C rice vinegar 1 T minced garlic 2 T honey 1/4 tsp coarse dijon mustard pinch of salt pinch of pepper Drizzle over salad on plates.
