Seinfeld - Kramer's Lobster Scrambled Eggs image

Like we really ever have "left overs" when it comes to lobster. LOL! Right? Well, these are fantastic! Nice & fluffy eggs with buttery lobster meat in it. What can be any better than that? NOTHING!

Number Of Ingredients 8

6 x large eggs, room temperature
1/4 cup(s) heavy cream, room temperature
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/2 teaspoon(s) old bay seasoning
1 teaspoon(s) tarragon
1 stick(s) butter
1 large lobster, cooked & cooled, cut into big chunks

Steps:

  • In a medium bowl, add eggs, cream, salt, pepper, old bay & tarragon; whisk well to combine. Set aside. NOTE: Room temperature items - leave out 30 minutes before cooking. Why? If you put a cold egg or cream into a hot pan, what happens? The pan cools down. You put a room temperature item in - the pan still stays hot. Plain & simple.
  • In a skillet over medium low heat; add butter & melt; add lobster chunks; cook 1 minute or until slightly sizzling (you do not want to cook the lobster - it's already cooked - you just want to warm it up).
  • Turn heat up to medium & pour egg mixture over lobster, stir constantly with spatula until done. NOTE: When no more liquidous eggs is running around pan, turn heat off & gently transfer to a warmed plate.
