SEARED SCALLOPS WITH DELICIUS CITRUS SAUCE image

Seared Sea Scallops with Spicy Citrus Dipping Sauce
Dipping Sauce
2 cups fresh squeezed Clementine or orange juice (I used Tropicana oj but fresh squeezed would be better)
1 tsp. chili powder (more if you like it picante)
Finely grated zest and juice of one lime
3 tsp. butter or butter substitute or to taste
Scallops
½ extra-virgen olive oil
¾ lb. sea scallops
Salt and freshly ground pepper

Steps:

  • 1. To make sauce: In a sauce pan over high heat, bring juice, chili powder and lime zest and juice to a boil. Reduce heat and simmer for one hour or until mixture is thick and syrupy. 2. Remove from heat and whisk in butter until incorporated. 3. In a large skillet over high heat, heat 2 tbsp. olive oil until very hot. Season scallops with salt and pepper. Sear 1-2 minutes preside until golden brown. Serve with warm sauce reduction.
