Shallot Butter image

This shallot flavored butter goes great on broiled or grilled fish and meats or on omelets. The recipe originally came from one of my mother's recipe files.

Number Of Ingredients 5

1/2 c (1 stick) butter, softened
4 tsp finely chopped shallots
1 c dry white wine
salt and white pepper to taste
1 Tbsp finely chopped parsley

Steps:

  • 1. Combine shallots and wine in a saucepan and simmer until wine is reduced to 1/4 cup.
  • 2. Cream butter with a fork in a bowl. Gradually stir in shallot wine, parsley, and salt and white pepper to taste.
