SEARED SALMON WITH MOROCCAN SPICE CRUST image

1 t coriander seeds
1 t caraway seeds
1 t anise seeds
1 t black peppercorns
3 T light sesame oil
4 6 oz salmon steaks

Steps:

  • Coarsely grind coriander, caraway, anise and pepper in a mortar & pestle In a bowl, combine spice mixture with oil and mix well. Season salmon with salt and pepper Rub both sides of each salmon piece with a generous amount of spice/oil mixture. Grill salmon, turning once, until fish is browned on the outside and opaque in the center (about 4 minutes per side).
