Sea Bass with Asparagus image

Wrap your fish (and a few Asian-inspired ingredients) in foil, and dinner's in the bag

Number Of Ingredients 8

4 12" squares of aluminum foil
4 fillets (6 oz each) sea bass, halibut, or another firm white fish
12 asparagus spears, woody ends removed
1/4 lb shiitake mushrooms, stems removed
1 tbsp grated fresh ginger
2 tbsp low sodium soy sauce
2 tbsp mirin (sweetened rice wine) or sake
Salt and pepper to taste

Steps:

  • Preheat the oven to 400°F. Lay the foil pieces on a counter and place a fillet in the middle of each one. Scatter the asparagus, mushrooms, and ginger on top of the fish.
  • Drizzle each fillet with soy sauce and mirin and season with a small pinch of salt and black pepper.
  • Fold the foil over the ingredients and crimp the edges to seal. Place the packets on a large baking sheet and bake 20 to 25 minutes, depending on the thickness of the fillets.
