This vinagrette is great over salad greens too.

Steps:
- Place all the ingredients for the vinagrette in a jar with a lid. Shake vigorously to combine. Set aside.
- Season the scallops with salt and pepper. Add the olive oil to a large skillet. Once the oil is smoking sear the scallops about 3 minutes per side.
- Drizzle the vinagrette onto a serving dish and place the scallops on top.
