WINTER GREENS AND POTATO CASSEROLE image

8 c water
12 c kale, stemmed, chopped (1/2 lb.)
12 c mustard greens, stemmed, chopped (1/2 lb.)
6 c red potato,1/8-inch slice (2 lb.)
cooking spray
2 c onion, sliced vertically
3/4 t salt
1 c (4 oz.) sharp provolone, divided
1/2 c veggie broth
5 slices turkey bacon

Steps:

  • 1. Cook turkey bacon 2. Bring water to boil dutch oven. Cook greens 5 min, til tender. Drain. 3. In 13x9 dish coated with spray, in this order: --1/3 of potatoes, 1/2 of onion, 1/4 t salt, 1/2 of kale, 1/2 of cheese --1/3 of potatoes, 1/2 of onion, 1/4 t salt, 1/2 of kale --1/3 of potatoes, 1/2 of cheese Pour broth over all and sprinkle 1/4 t salt 4. Cover with foil and bake 45 min. Uncover and bake 30 min.
