Scalloped Zucchini image

I honestly don't know when or how I came by this recipe but it is a great side dish!

Number Of Ingredients 9

COMBINE:
1 c bisquick
1/2 c vegetable oil
4 large eggs
1/2 tsp salt
AFTER MIXING WELL, ADD:
1/2 c finely chopped onion
1/2 c grated cheese (your choice!)
3 c thinly sliced zucchini

Steps:

  • 1. Mix everything together until it is well combined and pour into a greased 10 inch pie pan. (The original recipe used a greased 9x13 but I prefer the pie pan.)
  • 2. Bake at 350 degrees for 30 minutes. It can sit on the counter for a few minutes and cool a bit before you serve it. You can cut it in wedges or just spoon it out.
