Steps:
- 1. Preheat oven to 400. Lightly butter a 13x9 glass baking dish. 2. Mix cheeses in a small bowl. Bring milk to a simmer in a medium saucepan. 3. Arrange half potatoes in prepared dish, overlapping slightly. Season with salt and pepper. Sprinkle with onion and flour. Dot with 2 Tbsp butter. Sprinkle with half of cheese mixture. Top with remaining potatoes. Season and dot with remaining butter. 4. Pour milk over the potatoes. Cover baking dish tightly with foil. Bake 45 minutes. Uncover dish (liquids may look curdled), sprinkle with reserved cheese. Bake uncovered about 45 minutes longer, until potatoes are tender and cheese is a deep golden brown. Let stand 15 minutes before serving.
