Scallop and Herb Pasta image

Everyone loves this dish and always asks for the recipe! I think the best part is the bacon; bacon always brightens up a meal!

Number Of Ingredients 9

1 pkg linguine or spaghetti
2 Tbsp butter
1 1/2 lb scallops
1 c peas
3 slice bacon, crumbled
2 clove garlic, minced
2 Tbsp parsley, chopped
2 Tbsp chives, chopped
1/4 c parmesan, grated

Steps:

  • 1. Bring large pot of lightly salted water to boiling. Add pasta. Cook to al dente or to preference. Drain and rinse, keep warm.
  • 2. Meanwhile, in large skillet melt butter over medium high heat. Pat scallops with paper towel to remove excess juices. Add scallops to skillet; cook and stir 5 minutes. Add peas, bacon, and garlic to skillet; cook and stir 2 minutes. Add parsley and chives; toss gently to combine.
  • 3. Serve pasta, top with scallop mixture, and sprinkle with Parmesan.
