BLACKENED PORK CHOPS WITH APPLES image

4 1-inch Boneless (center cut)Pork Chops
Blackening (Cajun) seasoning
1 large onion (thinly sliced)
2 Tbs. Margarine
1-2 Granny Smith Apples (cored, peeled, thinly sliced and quartered)
1/4 Cup Golden Raisins
2 Tbs Brown Sugar
1/4 - 1/2 Cup Apple juice/cider
Dash of Cinnamon

Steps:

  • Melt margarine in saute/fry pan. Add thinly sliced onions and cook on low heat to let carmelize. Pat boneless pork dry and dredge in cajun seasoning. Heat skillet till very hot (smoking) and add pork. Let pork blacken for about 5-7 minutes on each side. Remove from heat. Pork should be slightly pink in center. Once the onlions are soft and translucent, add apple slices ,raisins, brown sugar, cinnamon and apple juice. Continue cooking on a higher heat until apples are soft and most of the liquid has cooked off. Serve the apple mixture alongside the pork
