Savory Spinach Egg Recipe Using Canned Spinach image

Found on a diabetic website by Tami Ross and another pantry spinach recipe. If watching sodium use sodium reduced spinach.

Number Of Ingredients 6

1 (13 1/2 ounce) can spinach
1/4 cup egg substitute
1 dash pepper
1/8 teaspoon salt
1/4 cup skim milk
cooking spray, pam

Steps:

  • In bowl, whisk together egg substitute, milk, pepper and salt.
  • Stir in spinach (I think it should be diced)and mix well.
  • Spray Pam on skillet.
  • Cook over medium, stirring frequently until most of liquid is evaporated.
