Savory Apricot Truffles image

8 ounces Cream Cheese, room temperature
4 ounces Goat Cheese (soft), room temperature
2 teaspoons Thyme, finely chopped
2 teaspoons Chives, finely chopped
1 cup Pistachios, finely chopped

Steps:

  • 1. In a medium bowl, mix together cream cheese & goat cheese, thyme, chives. Stir in the apricots, taste & add sea salt & pepper as needed.
  • 2. Form the mixture into compact 1 inch balls.Roll each ball into the pistachios, and place on a parchment-lined baking sheet.
  • 3. Cover with plastic and refrigerate 20 minutes, until firm. Truffles can be made up to 8 hours in advance. Serve at room temperature.
