Sausage and Rice Casserole image

A yummy side dish, totally Southern! For an additional punch of color, you can use half green pepper and half red pepper.

Number Of Ingredients 7

1 pound(s) hot pork sausage
1 cup(s) celery, chopped
1 cup(s) onion, chopped
1 cup(s) green bell pepper, chopped
1 cup(s) rice, uncooked
1 can(s) (14 oz) chicken broth
salt & pepper, to taste

Steps:

  • In a large skillet, brown the sausage and crumble. Remove sausage from pan to a 2 quart casserole dish. Drain and reserve the drippings.
  • Add about a tablespoon of the drippings to the skillet. Add the celery, onion, and bell pepper. Saute for two minutes, or until they start to soften. Pour into the baking dish with the sausage. Add the rice to the baking dish.
  • Pour the chicken broth into a 2 cup measuring cup. Add water to yield 2 cups total. Stir into the rice mixture. Season to taste with salt and pepper.
  • Cover tightly with foil and bake for 1 hour, until rice is done and liquid is absorbed.
