SAUSAGE AND APPLE CASSEROLE image

2 tbs butter
1 pound bulk sausage
1 large Granny Smith apple, peeled, cored, and diced
1/2 cup chopped onion
1 8 1/2 oz package corn bread mix
1/2 cup plus 2 tbs grated cheddar cheese

Steps:

  • Preheat oven to 400 F. Melt butter in a skillet, then add crumbled, sausage, apples and onion; cook until sausage browns. Drain and set aside. Prepare corn bread batter according to package directions. Add 1/2 cup grated cheese; mix just until incorporated. Do not overmix. Place sausage mixture in a lightly greased 8 inch square baking dish. Top with cheese-corn bread mixture. Bake 20-25 minutes. Sprinkle with remaining 2 tbs cheese; bake 5 minutes longer.
