Sardine-and-Pepper-Topped Cracker image

1 oil-packed piquillo pepper (drained and thinly sliced into rings)
1 oil-packed Spanish sardine (drained and halved, bones removed)
1 whole-wheat Wasa cracker
A few baby arugula leaves
1/4 teaspoon fresh lemon juice

Steps:

  • Place pepper and sardine on cracker. Top with arugula. Drizzle with lemon juice.
