Steps:
- Preheat Oven to 350 degrees. In a large skillet preheat 1-2 Tbs. Olive or Coconut oil. Brown meat and drain grease. Add and saute Onions until translucent Add Pepper and saute just until warmed Mix Tomato sauce and enchilada seasoning packet in a medium sauce pan and heat on medium heat. To meat and veggie mixture add beans, tomatoes and green chilis. Heat through and spoon 1 or 2 spoonfuls of enchilada sauce into the mixture. Cover bottom of 9 by 13 baking dish with enchilada sauce. Spoon mixture into tortillas, sprinkle with cheese and fold into enchiladas. Pour remaining enchilada sauce over enchiladas. Sprinkle remaining cheese over enchiladas. Bake for 15 minutes. Let stand for 5 minutes and serve with your favorite salsa and low-fat sour cream.
