SANTA FE STYLE BEEF STEW image

Number Of Ingredients 10

2lbs cubed beef
1 large onion, chopped
3/4 t. garlic powder
1 t. cumin
1/2 t. salt
10 oz diced tomatoes w/green chilis
4 oz can chopped green chilis, with liquid
15 oz beef broth
1/4 c. water
2 lg white potatoes, peeled and chopped

Steps:

  • Brown beef in large stockpot. Add onions and cook for 5 minutes until softened. Add spices, tomatoes, chillis, broth and water. Bring to boil. Reduce heat and simmer one hour, partially covered, stirring occasionally. Add water or broth if liquid gets low. Stir in potatoes and simmer for an additional 20-30 minutes until fork tender.
