SANTA FE BLACK BEAN SOUP image

Number Of Ingredients 15

2 T olive oil
3 slices bacon, cooked, diced
1/4# smoked ham diced
2 med onions diced
2 cloves garlic, minced
2 stalks celery chopped
1-1/2 c. dried black beans washed and soaked overnight and drained
2-1/2 tsp dried red chili flakes
4 c water
1 T beef base
1 tsp salt
1/2 tsp pepper
1/4 c sherry
1/8 c white vinegar
1 T fresh cilantro minced

Steps:

  • Heat oil on med.; Add baconk ham, onions, garlic, celery. Saute till tender, Add beans, red chile, water, beef base, salt pepper. Bring to a boil and simmer 3 hrs Add water if necessaryl. Skim fat from top. Place soup in a food processor and puree till smooth. Refrigerate overnight. To serve heat and add sherry and vinegar. Garnish with Cilantro.
