SALTINE CRACKER PUDDING an OLD Penn.Dutch Recipe image

A few years back, I was mailed a few recipes, from my Aunt's, Penn. DUTCH friend. Everyone knows ..I collect recipes! This is one of them. The hard working Colonial Pennsylvania Dutch, were hard working people. And very frugal! We can learn a lot from them, from some of there recipes! I Wonder? Where did they get coconuts,...

Number Of Ingredients 8

2 c milk
2 beaten egg yolks
1/4 c sugar
1/2 c shredded coconut
1 tsp vanilla
2 egg whites
1/4 dash(es) sugar
1 c coarsely crushed saltine crackers

Steps:

  • 1. In a saucepan gradually stir milk into egg yolks.Add 1/4 cup sugar. Cook and stir over medium heat till thick and bubbly. Remove from heat. Stir in crackers, coconut and vanilla. Pour into a 1 quart casserole dish. Beat egg whites till soft peaks form. Very gradually add 1/2 cup sugar, beat till stiff peaks form. Spread over hot pudding. Bake at 350 for 12 to 15 minutes. Serve and enjoy!
  • 2. * NOTE: Speaking of crackers, I just came across A JAP member.. Barbara Pendly recipe for: "DEPRESSION APPLE PIE" Made with CRACKERS. Plain ole saltine crackers. This was before RITZ came along!! NOT RITZ CRACKERS. check it out.....Looking good.
