Salsa Pork Chops image

This is a modified "Atkins Diet" recipe. It's low-carb and delicious!!! My hubby loves it, especially drenched with salsa, so I let him have most of the sauce and put extra cream cheese on mine. I use the already prepared cream cheese w/chives from the grocery store.

Time 30m

Number Of Ingredients 4

4 thick cut pork chops
olive oil
1 c your favorite salsa
spreadable cream cheese w/chives

Steps:

  • 1. Heat oil in a medium skillet. Brown chops on both sides.
  • 2. Cover the chops with the salsa. My husband likes a lot of salsa but you can use less if you like.
  • 3. Lower heat and cook (covered) until chops reach about 160 degrees.
  • 4. Top each chop with about a tablespoon of the cream cheese w/chives.
  • 5. Continue to cook until topping is softened, about another 5 minutes.
