SALMON WITH SERRANO AND LIME image

2 (6 oz) salmon fillets, skinned
1/2 tablespoon olive oil
1/2 tablespoon butter
1 fresh serrano chile, halved then thinly sliced
1 teaspoon lime zest
2 teaspoons lime juice
salt and pepper to taste

Steps:

  • Pat salmon dry and season with salt and pepper. Heat oil and butter in a medium nonstick skillet over medium-high heat until hot but not smoking. Cook salmon for 4 to 5 minutes. Turn salmon over and cook for another two minutes. Add chile, lime zest and juice on top off salmon. cover and continue cooking until done, about 2 or 3 minutes. Serve with your favorite side dish.
