SALMON WITH OREGANO SUNDRIES TOMATOES image

Number Of Ingredients 6

4 center cut salmon filets ( about 1 and 1/2 inches thick).
3/4 cup sundried tomatoes in oil
1/2 tsp dried oregano
S & P
1 to 2 tbsp butter
oil

Steps:

  • add oil to preheated nonstick grill pan on stove top. Place filets in pan once oil is hot. Sear on each side for 3 to 4 minutes for medium rare (instant read thermometer in center of fish about 130 degrees fahrenheit). While salmon is searing, food process the 3/4 cup sundered tomatoes with the oregano, butter, S & P. Remove fish from pan and plate with a dollop of tomato sauce on each filet.
