SALMON WITH LEMON-CILANTRO VINAIGRETTE image

1 10-oz box COUSCOUS (1.5 cups)

SALMON
1 Tblspn olive oil
1.25 lb skinless salmon fillet, cut into 4 (5oz) portions
1/2 teaspoon paprika
Kosher salt and black pepper

VINIAGRETTE:
4 scallions, chopped
1/2 cup fresh cilantro, chopped
2 Tblspns fresh lemon juice
2 Tblspns oil
1/4 tsp each Kosher salt and black pepper

Steps:

  • Cook the couscous according to the package directions. Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Season the salmon with the paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until opaque throughout, 3 to 4 minutes per side. (Meanwhile, in a small bowl) combine the scallions, cilantro, lemon juice, the remaining 2 Tblspns oil, and 1/4 teaspoon each salt and pepper. Drizzle over salmon and couscous.
