Salmon with Hoison, Orange and Bok Choy image

Number Of Ingredients 9

2 heads bok choy, cut lengthwise into wedges, or clices (your preference)
2 ounces salmon filets, 5-6 ounces each
2 tablespoons orange juice, fresh
1 green onion, thinly sliced
1 tablespoon hoisin sauce
1 teaspoon ginger, peeled and finely minced
1.5 teaspoons orange peel, finely grated
3/4 teaspoon coriander seeds, cracked
1/4 cup cilantro leaves

Steps:

  • Preheat oven to 425 degrees. Form bed of bok choy in center of two 16" squares pieces of foil. Top bok choy (and snap peas and bell pepper if you choose) with fish.
  • Mix orange juice, green onion, hoison, ginger and orange peel in small bowl. Spoon mixture over fish, dividing equally. Sprinkle with salt and pepper and coriander. Top with cilantro.
  • Fold foil up to seal, enclosing packets completely. Place on baking sheet. Bake until fish is just opaque in center, approx. 12-15 minutes. Transfer packets to plate and serve.
