SALMON TARTLETS image

Yield 2 dozen pieces

Number Of Ingredients 16

Tartlets:
1/2 c. butter softened
1 pkg. (3 oz.) cream cheese softened
1 c. flour
Filling:
2 eggs
1/2 c. milk
1 T butter, melted
1 t. lemon juice
1/2 c. dry bread crumbs
1 1/2 t. dried parsley flakes
1/2 t. rubbed sage
1/2 t. salt
1/4 t. pepper
1 can (14 3/4 oz) salmon drained and bones removed
1 green onion, sliced

Steps:

  • In a mixing bowl, beat butter, cream cheese, and flour until smooth. Shape tablespoonfuls of dough into balls. Press onto the bottom and up the sides in miniature muffin cups. In a bowl combine eggs, milk, butter, and lemon juice. Stir in crumbs, parsley, sage, salt and pepper. Fold in salmon and onion. Spoon into shells. Bake at 350 degrees for 30-35 minutes. Or until browned.
