Salmon Sandwiches with Chimichurri Mayo image

The herb-flavors in the Italian dressing makes a quick chimichurri sauce for this one-of-a-kind sandwich.

1/4 cup KRAFT Zesty Italian Dressing, divided
6 salmon fillets (1-1/2 lb.), skin removed
1/4 cup fresh parsley, finely chopped
1/4 cup cilantro, finely chopped
1/4 cup finely chopped onions
1/4 cup KRAFT Real Mayo
1 tsp. crushed red pepper
1 tsp. lime juice
1 small French bread baguette, cut diagonally into 12 slices
1 cucumber, thinly sliced

Steps:

  • Heat 2 Tbsp. of the dressing in large skillet. Add fish; cook 4 min. on each side or until fish flakes easily with fork and golden brown on both sides.
  • Meanwhile, mix remaining 2 Tbsp. dressing, the parsley, cilantro, onions, mayo, red pepper and lime juice.
  • Spread mayo mixture onto bread slices. Fill evenly with fish and cucumbers.
