My family loves salmon cakes (patties). This particular recipe came out of one of many cookbooks I own. I just love recipes!

Steps:
- 1. Whisk together egg, Old Bay & pepper in medium-size bowl. Add salmon and juice, onion & breadcrumbs or flour, whichever you choose to use. Stir to mix well. Or just dig in with your hands.
- 2. Shape into 3" cakes.
- 3. Place a large cast-iron or heavy-bottomed skillet over medium-high heat until hot then add oil. Once oil is hot spoon mixture into hot oil & cook 4 minutes or so on each side or until golden brown. Drain on paper towels.
- 4. Pretty plated up on fresh spinach leaves with lemon wedges on the side and tartar sauce in a pretty, glass small bowl, all in the same plate.
