My family loves this recipe. I usually make this on Friday's after a long week from working. It is quick and easy dinner. I make it with some vegetables and that's it! My dear mother, who passed away, used to make this recipe but I revised it to a healthier version. Enjoy everyone!

Steps:
- 1. In large bowl mix the above ingredients together. Except the Olive Oil.
- 2. Form into balls and pat down. Makes about 7 croquettes. Coat with Italian Bread Crumbs.
- 3. Put Olive Oil in Non-stick Fry pan. Heat Olive Oil Medium to Low Heat then place the 7 croquettes in hot oil.
- 4. Cook approximately 2 to 3 minutes on each side until golden brown. Drain on Paper Towel.
