A spiced and chilled Mediterranean salad.

2 tomatoes, diced
2 green bell peppers, diced
1 red bell pepper, diced, or more to taste
½ cucumber, diced
½ cup olive oil
½ red onion, diced
2 scallions, chopped
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley, or to taste
1 tablespoon chopped fresh mint, or to taste
1 tablespoon chopped fresh dill, or to taste
2 teaspoons vinegar
2 cloves garlic, minced
½ teaspoon ground sumac
salt and ground black pepper to taste

Steps:

  • Combine tomatoes, green bell peppers, red bell pepper, cucumber, olive oil, red onion, scallions, lemon juice, parsley, mint, dill, vinegar, garlic, sumac, salt, and pepper in a large bowl; mix thoroughly.
  • Chill tomato mixture until flavors combine, about 25 minutes.
