SAGE DRESSING WITH SAUSAGE AND COLBY CHEESE image

Yield 6-8 persons

Number Of Ingredients 10

1 bag turkey giblets and neck.
1 pound sage sausage
1 large onion, chopped (1 cup)
3 medium celery stalks, sliced (1 1/2 cups)
1 package (16 ounces) seasoned sage stuffing crumbs (5 3/4 cups)
1/3 cup butter or margarine, melted
1/4 teaspoon pepper
2 cups chicken broth (from 32-ounce carton)
2 Knorrs chicken stock
1 1/2 cups shredded Colby cheese (6 ounces)

Steps:

  • 1)Cook giblets (about 30 minutes then add liver and cook another 30 minutes. Pick meat from neck and chop giblets; set aside. 2) Cook sausage, onion and celery in cast iron skillet over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. 3) Place sausage mixture, stuffing crumbs, butter, and pepper into same cast iron pan. Pour broth and Knorrs chicken stock over mixture; toss to combine. Cover and cook on Low heat setting (small burner) 3 hours to 3 hours 30 minutes. Gently stir in cheese. 4) Serve stuffing, or keep warm in cast iron cooker up to 1 hour.
