SAGANAKI image

I first tried Saganaki in Athens, Greece. I have made Saganaki at home in my kitchen. It is really good. My husband and I both enjoy very much and I hope you will try and love it too. This recipe comes from the recipe book "Greek With Gusto" Greek Cuisine = easy & delicious by Nicholas and Julie Roukes

Number Of Ingredients 6

- graviera, kasseri or kefalotiri cheese cut into 1/2 " (1cm) slices
- (i use kefalotiri cheese) buy at a greek store or cheese shop
- flour
- butter or margarine
- lemon wedges
- brandy optional

Steps:

  • Dust cheese lightly with flour
  • Heat a skillet over medium high heat
  • Add butter and fry the cheese until golden brown on both sides
  • Transfer to a warm plate
  • squeeze lemon juice over the slices
  • Serve immediately
  • ADD TO THE GUSTO! TO MAKE SAGANAKI FLAMBE:
  • Remove skillet from stove
  • pour a jigger of warmed brandy over the cheese and light with a long matchstick.
  • Serve with lemon wedges when flame subsides
