3 CUPS (1 1/2LBS) ISRAELI COUSCOUS
3 CUPS CHICKEN BROTH
4 T BUTTER
1/2 t CRUMBLED SAFFRON THREADS
KOSHER SALT
1/4 CUP OLIVE OIL

Steps:

  • Position rack in center of oven & heat to 350. Put couscous in a 9x13 inch baking dish. In small saucepan, heat broth, butter, saffon, & 1 t. salt over med-high heat until butter is melted & broth hot. Pour over couscous & mix well Cover baking dish with foil & bake until liquid absorbed , 10-12 min. Let sit at room temp, covered, for 5 min. Drizzle olive oil over couscous. Gently mix with fork to coat couscous in oil & break clumps.
