Rustic Shepherd's Pie image

Chef-inspired recipe using fresh produce and Farm Boy™ Bourbon BBQ Sauce.

Number Of Ingredients 13

9 cups chopped cauliflower
1 cup EACH chopped onions, diced carrots, corn kernels, peas
1/4 cup Butter
1/2 tsp Salt ((to taste))
1/2 tsp Black Pepper ((to taste))
1 Tbsp Vegetable Oil
500 g Lean Ground Beef
1 clove Garlic, minced
1 Tbsp fresh thyme
2 Tbsp Farm Boy Bourbon BBQ Sauce (q)
2 Tbsp Flour
1 cup Water (1)
1/4 tsp paprika

Steps:

  • Place cauliflower in large microwave-safe bowl with 1/4 cup water and microwave, covered, for 3-5 minutes, or until completely soft. Drain and place in food processor with butter, salt and pepper. Process until completely smooth.
  • Heat large frying pan over medium high heat. Cook beef, breaking up bits, until no longer pink, 3-4 minutes.
  • Add onion, garlic and carrots and cook until onions are translucent.
  • Add thyme, BBQ sauce, flour, corn, peas, water, salt and pepper. Cook until mixture has thickened, about 4 minutes.
  • Spoon beef mixture into 9" baking dish. Top with cauliflower puree. Sprinkle paprika over top.
  • Bake at 400°F for 30-40 minutes, or until internal temperature reaches 165°F. Garnish with herbs and serve.
