ROTINI WITH SHRIMP & BACON image

Number Of Ingredients 6

12 oz. whole wheat rotini pasta
6 slices Turkey Bacon, cooked and crumbled
1-2 lemons or 1 lemon and 1 1/2 tsp lemon zest
1 lb. large, shelled and deveined shrimp (not cooked)
1/2 cup loosely packed, sliced, fresh basil leaves
1 TBS olive oil

Steps:

  • 1. Cook pasta as label directs. Toss cooked pasta with a little butter to keep from sticking. 2. Cook bacon in microwave, drain, cool and crumble. 3. In a 12-in skillet, heat olive oil over medium heat. Add shrimp and stirring often, cook until pink and obaque (about 4 minutes). 4. Squeeze juice from lemon onto cooked shrimp and add zest. 5. Add basil leaves and bacon. 6. Add mixture to pasta and toss and serve.
