Rosé Royale image

This is the best-selling summer cocktail at Ralph Lauren's Polo Bar in Manhattan, where it is regarded as "summer in a glass." A critical ingredient is French grapefruit liqueur, or pamplemousse, a relatively new spirit that contributes aroma, a touch of sweetness and a bitter edge, even in a small dose. It marries superbly with rosé wine. Consider adding a splash of it to a glass of rosé Champagne.

Number Of Ingredients 5

1/2 ounce grapefruit liqueur
1/2 ounce Royal Combier or Grand Marnier
3 ounces rosé wine, chilled
2 ounces Champagne, chilled
Strip of pink-grapefruit or orange peel

Steps:

  • In a large wine glass, combine the grapefruit liqueur and Royal Combier. Add the wine and Champagne. Add a few ice cubes and stir.
  • Twist the grapefruit peel over the drink to release oils, then drop it into the cocktail.
