Rosemary Sugar Cookies image

Number Of Ingredients 8

9 ounces cold, unsalted butter, cubed
1/2 cup sugar
5 ounces unbleached, AP flour
4 1/2 ounces cake flour
1/4 cup cornstarch
1 tablespoon fresh rosemary, finely chopped
1/2 teaspoon salt
1 large egg

Steps:

  • Mix butter and sugar in stand mixer on medium low speed just till combined
  • Scrape down bowl and paddle, add flours, cornstarch,rosemary and salt.
  • Blend on low speed just until mixed.
  • Form dough into 3- 1/2" thick disks, wrap and refrigerate for at least an hour and up to overnight.
  • Preheat oven to 350
  • Line baking sheets with parchment, take out one disk and let sit 5 minutes.
  • Break off pieces, roll into balls, and flatten.
  • Make egg wash, brush cookies, and sprinkle with more sugar.
  • Refrigerate for 15 minutes on cookie sheet.
  • Bake for 19 minutes. Let cool for a couple minutes on cookie sheet, then move to cooling rack.
