ROMAINE, BEET & BLUE CHEESE SALAD (DAISY) image

Number Of Ingredients 8

2 med. Beets
Fine sea or kosher salt
1 head romaine lettuce
2 t. sherry or other vinegar
1/2 olive oil
1 T white wine vinegar
Pepper
1 c. crumbled blue cheese

Steps:

  • Peel bets, cut in 1/2, boil in salted water 25-30 min until tender. Drain & let stand until cool enough to handle. Cut in 1/2 in dice. Toss in sherry vinegar & some olive oil. Tear lettuce into 2" pieces Mix vinegar, olive oil, s & p & toss with lettuce. Scatter beets & blue cheese on top.
