- Peel bets, cut in 1/2, boil in salted water 25-30 min until tender. Drain & let stand until cool enough to handle. Cut in 1/2 in dice. Toss in sherry vinegar & some olive oil. Tear lettuce into 2" pieces Mix vinegar, olive oil, s & p & toss with lettuce. Scatter beets & blue cheese on top.
