ROBERT'S CHICKEN & SAUSAGE CHILI image

Yield 6-8 cups

1/2 jalapeno pepper, seeded & chopped
2 cloves garlic, finely chopped
1/4 cup red wine
2 tbsp butter
1 14.5oz can diced tomatoes & green chilis
1 15.5oz can of black beans (Goya)
1/2 cup water
1 cup cooked, chopped chicken
1 sausage link (Trader Joe's Andouille sausage), halved & sliced
seasoning:
1/2 tsp chili powder
1/8 tsp cinnamon
1/4 tsp sugar
1/4 tsp salt
1/4 tsp cumin
1/4 tsp onion powder
1/8 tsp cajun seasoning

Steps:

  • If your chicken is not cooked, then chop it up into bite-size pieces and cook it over medium heat in 1-2 tbsp of olive oil. Remove from heat for adding later. If the sausage is not cooked, then cook the entire link in a skillet with olive oil. Do not halve and slice the sausage until just before adding to mixture (below). Melt butter in a shallow (3") saucepan. Simmer both the garlic and pepper for 2 minutes. Add wine and simmer for 3 minutes. Add can of diced tomatoes and can of black beans (both with liquid) and simmer for 4 minutes. Add cooked chicken and sausage to simmering mixture and 1/2 cup water. If the chicken and sausage are cold, then simmer for 3-4 minutes before adding seasoning mix; otherwise add mix and meat simultaneously. Note: use seasoning mix to taste. Simmer for at least 10 minutes before serving over rice.
